Fiesta Chicken Salad with Lime Cilantro Vinaigrette

One of our favorites... Especially for Chelle

1/2 cup Green Onion~Chopped
1 Tbsp. Minced Garlic
1/4 cup Lime Juice
1/4 cup Fresh Cilantro~Chopped
1/2 cup Vegetable oil
2 cups Red Leaf Lettuce~Thinly Sliced
3 cups Napa Cabbage~Thinly Sliced
1 cup Cooked Chicken Breast~Diced
2 Plum Tomatoes~Seeded and Chopped
1/2 Red Bell Pepper~Diced
1/2 Yellow Pepper~Diced
1 Avocado~Peeled and Diced
1/4 Cup Frozen Corn Kernels~ Thawed
1/2 Cup Tortilla Chips~ Crumbled
1/4 Cup Red Onion~ Thinly Sliced
1/2 Cup Feta Cheese~ Crumbled


For Vinaigrette: Combine Green Onion, Lime Juice, Cilantro, and Garlic. Gradually whisk in Oil. Season with Salt and Pepper. Cover and Chill.

For Salad: Combine all other Ingredients except for the Feta, in a large bowl. Toss with Vinaigrette to coat, and top with cheese.
